以竹編八寸籠承載秋意,是懷石料理中最具視覺與季節轉化的起始章節。

主廚依節氣選材:醬燒鮭魚、胡桃南瓜、紫蘇蓮藕、昆布卷、柿子玉子燒、炭香銀杏、干貝絲柚味漬。每一道食材分別象徵收穫、轉色、晨露與野山。搭配赤楓與稻穗點景,呈現如畫般的初秋詩意。

這不只是前菜,而是帶領賓客進入「佳禾式秋懷石」的序章。

The Hassun course is a signature moment in kaiseki, where seasonal motifs and visual storytelling come alive.

In this autumn presentation, a handwoven bamboo tray cradles an elegant arrangement: miso-glazed salmon, roasted ginkgo nut, marinated lotus root, kombu roll, persimmon-tamago yaki, and citrus-dressed scallop slivers. Each element evokes symbols of the harvest — turning leaves, golden grains, mountain winds.

The tray is adorned with a sprig of rice and crimson maple leaf — an invitation to pause, observe, and savor the fleeting season.
